There are numerous methods to acquire stars in the game. Each visit to the Observatory awards you +1 star, while concluding the day in the Planetarium gives you +2 stars. Certain items also provide bonuses, like the Morning Star from the Armory.

If you want to maximize your stars in Blue Prince, you should take advantage of experiments in the Laboratory. This process includes collecting all Microchips to place them in the Sundial.
